THE ENIGIN YEAR VANISHES…Whoosh ……Gone!

Strange as it seems but the older you get the quicker the time seems to fly by.  Why it only seems like yesterday when we here at Enigin were discussing summer and now it’s Autumn.

This is the time of year when we should be planning for those cold winter weeks by making the most of the abundance of food that needs to be collected  and stored for the onslaught.  Blackberries, Sloe’s, other fruit  and vegetables that may still be on the tree’s or in the ground that if left will ruin.  Get it picked and either frozen for later use or pickled.  Nows the time to get the sloe gin on for Christmas.  A good tip is to freeze the sloe’s before use as this releases the pectin and makes for better gin…Hicc!!!!

Enigin.com - Facing the Music!

Last night I had the pleasure of attending a friend’s social event at a local venue, however I was forced to face the music in respect of the disco that was hired for the event. Why is it that musicians and record companies go to great lengths to produce first class sounds from their records balancing each instrument carefully with the vocal content when almost all so called DJs have the tremendous aptitude for reducing weeks of work into two distinct sounds that can almost cave your chest in with the volume turned up full blast.

Menu of Choice

To continue the subject of our enjoyable dinner party I would really like to share with you the wonderful menu he had instore for us. With a menu on the table we were all able to explore and get excited over what was to come.

With 2 choices for our starter, of which he had made enough of both choices for everyone to have, we actually all had both! We just couldn’t resist. So I started with creamy parsnip soup with parsnips crisps on top - all home-made, and delicious. The second option was organic chicken with various homemade dips - again, this was absolutely lovely!

Its Been an Enigin Year!

I cant believe how fast this year has flown past!  Is it really December…I’m afraid so.  To say it has been an Enigin year must be an understatement.  Our Staff have been training new Enigin Distributors from around the world keeping us all on our toes and very busy.  We had a good summer here in Cornwall and it would seem that the number of holiday makers making their way down to Cornwall was up slightly.  Of course with the good weather we also had some bumber crops from the gardens and I for one was blessed with some great quality produce that became the highlight of summer BBQs and Dinner nights.  Rabbits, Duck, venision and a few brace of Pheasants have been frozen for use at this time of the year.  The purchase of half a pig and a few chickens will see us through the winter months with some exception meals.

We have already experienced early snow and frost so bad that it has affected the county quite considerably.  Its now that those savings made with Enigin products throught the year pay dividends as we run the heating plants to maintain comfortable temperatures.  Now is the time to start getting those plans together for the holiday.  Its OK to bake early and freeze for later use.  Have a great Holiday season and we will see you in the new year.

Cooking can be Rewarding

There is a real divide of people who enjoy cooking and then those that really don’t. And then you have a further divide of those you absolutely love to cook, and bake. And those who do enjoy it but not utterly love it.

I think personally I fall into that last category. I do really enjoy cooking and making meals. I am not interesting particularly in baking, although having young children I feel I should start being interested. But then as I said others really do love it. A friend of ours has recently taken a change of direction in careers, originally being a builder he can no longer do that work due to health reasons. So his new avenue is cooking! He ideally wishes to be a chef in the long run.

Enjoy Your Food

We enjoy our food down here at Enigin’s HQ in the South West of England. A lovely pub lunch just makes a day complete. I enjoy eating out especially.

Over the past weekend we ate out a lot. It is always so nice to do, though you do feel like your paying for it afterwards. After a few days of not caring what you eat, or drink, you definitely start to feel like you need a healthy, home cooked meal, with lots of vegetables.

Cheating with Food

Here at Enigin we enjoy our food! I enjoy cooking at home as well as eating out. Bot definately have their highlights.

I love the feeling of going out for something to eat, even if it is simply tapas, or a nice meal. It is exciting to be out in a bustling restaurant, enjoying a glass of wine and a well cooked pleasant meal.

But I also enjoy cooking in my own kitchen. Coming up with something delicious and different. Trying out new and interesting recipes and meals.

But still it is sometimes difficult to find new and different things to do. And then there can be the cost. You find a lovely recipe you’d like to try but then find you need all these random ingredients. Which are usually “stock cuoboard” ingredients but you only have in your “stock” if you already use them on a regular basis. Things such as rice vinegar, pine nuts, white wine vinegar, sesame oil. And to then go out and buy these items for one meal, is not cheap!

But what about cheating? There is a recipe book by one famous british cook which shows us how to cheat with food. It uses new and interesting recipes but with cheap and easy alternatives which you are more likely to have in stock.

It is a great way of keeping peoples interest in cooking at home and making it easier for them. So I am off now to cheat with my dinner, and hopefully enjoy a delicious and interesting meal.

ENIGIN - Mackerel - Simple

Following the last week or so of superbly hot weather there is a reasoning that suggests that its Too hot to be stuck over a hot stove preparing meals for the family.  Here at Enigin we believe in trying to keep things simple and easy to understand.  Strike up the Barby comes the cry and why not!   Get down to you local Fishmonger or supermarket if they have a decent fish counter and look for local freshly caught Mackerel.  Look for bright eyes and a shimmering skin which will tell you that the fish is fresh.  Ask the Fishmonger to fillet a couple of good sized mackerel and pin bone them..  When you get them home put them straight into the bottom of the fridge.  Light up the Barby and while you are waiting for it to go to white ash prepare nice fresh salad with lots of different elements.  Put about 4 desert spoons of extra virgin olive oil in a bowl and add 2 -3 dessert spoons of Red wine and stir well.  Add salt and pepper and mix well.   Enigin.

Ok lets bring this together for a terrific easy and great tasting meal.  Oil up the fish with olive oil and place skin side down on the BBQ.  It should not take long and you will see the fish cooking through.  Once the colour change id about two thirds of the way through the fish carefully lift the fish and turn it over.  Give it anothe minute and remove from the BBq and hold on a hot plate.  Plate up the salad, Cut a wedge of lemon and lay the mackerel fillets over the salad placing the lemon wedge on the fish.   Spoon on a little of the red wine dressing and serve with crusty bread.  A glass of cold cider goes well with this light meal.  Summer on a plate.  It works just as well with quality smoked mackerel just warmed.  Mackerel is one of the best superfoods just like Enigin is one of the super energy savers.

MAYDAY - Summers a time for saving at Enigin

Its official, here at Enigin summer is jus around the corner.  The jackets and overcoats are being left at home as the temperatures rise to a comfortable level.  Its now that we should all be thinking about saving energy as we turn down the heating and use less lighting as the daylight lasts longer.   Get out in the garden during the week end and avoid sitting in front of the TV, in fact why not switch it off rather than leaving it on standbye to gether with the DVD player, Sky box and Surround Sound system.  If you were lucky enough to have an Enigin Eniscope installed at home you would be able to see the saving this could make for you.  

The time also came for change came when I decided that the old car had to go!  Travelling in to Enigin every day certainly puts the miles on the car.  In my bid to “Save the planet”!! I have reduced my cars engine size from 2000cc to 1600cc which in turn has reduced my insurance costs and my road tax costs.  Its quite painless really just like saving energy the Enigin way.
